This instant pot vegan split pea soup is about as easy as it gets! Just chop a few aromatic veggies, add to the pressure cooker with dry split peas, water, and seasonings, and let it cook on it’s own with no stirring or babysitting needed!
Vegan Split Pea Soup ingredients:
A handful of baby carrots OR 2 regular carrots, chopped
2-3 stalks celery, chopped
1 onion, chopped
2 cups dry green split peas, rinsed
6 cups water
1-2 tsp. garlic, minced
Seasonings of choice (e.g. dry basil, smoked paprika, black pepper; salt if desired)
1 bay leaf
Optional: 5-6 drops liquid smoke and 2-3 tsp. coconut aminos (or low-sodium soy sauce), stir in after cooking
