For Dressing
๐น ยผ cup lemon juice + 1 tsp lemon zest

cup extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
๐น 1 garlic clove, minced
๐น 1 tbsp dried oregano (Greek oregano preferred)
๐น 1 tsp sweet Spanish paprika
๐น Salt and pepper
For Pasta Salad
๐น 2 cups cooked elbow pasta (from 1 cup dry pasta)
๐น 1 green pepper, chopped
๐น 1 pint cherry tomatoes, halved
๐น ยฝ cup chopped red onions
๐น ยฝ cup pitted Kalamata olives, halved or chopped
๐น 12 oz cooked large shrimp
๐น 2-3 avocados, pitted and chopped
๐น 1 cup chopped parsley
๐น 1 cup chopped fresh mint leaves, stems removed
๐น 4 oz Greek feta cheese, cubed or crumbled
