Season to your taste and the type or amount of chicken you are using.

Adobo seasoning (red top)
Mix together. Best when marinated for at least an hour.
2 cups all purpose flour
1/2 cup corn starch
Fill a separate bowl with cold water and sit aside. Coat the Chicken in the flour mixture. Shake off excess flour. Dip chicken in the cold water for at least 2-3 seconds. Remove from water and place back into flour mixture. Give the chicken a squeeze while coating it in the flour. Shake off excess flour and sit aside to rest.
THE SECRET TO GET THAT EXTRA CRUNCH:
Rub fingers together to remove clumped up flour. Adding it to flour mixture.
Repeat with the rest of the chicken. squeezing the chicken into the flour mixture. Let rest for at least 10 minutes.
Add chicken to hot oil. Let fry on both sides until golden brown. Remove from oil and drain on baking rack or paper towel. Let cool and Enjoy.
