Leftovers can get a bit boring, but we find this recipe never has that problem! Our warming, earthy, and all around delicious Vegan Bean Chilli recipe is so tasty and versatile that it never gets boring! You can serve up this warming bowl of vegan goodness over rice, or tortilla chips, or quinoa, or potatoes, or whatever your mind can think up! We encourage you get creative with it, and find out how you love to eat it.

What’s also great, is that it’s really easy to make too. It’s made from ingredients that are all super easy to find, so you won’t need to run around all the supermarkets just to get the specialty ingredients. In fact, you’ve probably got over half of the recipe in your kitchen already!

EASY VEGAN BEAN CHILLI RECIPE:
Serves 6

Ingredients:
CHILLI
• rapeseed oil
• 1 large onion
• 2 garlic cloves
• 2 medium carrots, grated
• 1 pepper, cubed
• 1 tin black beans (with water)
• 1 tin red kidney beans (with water)
• 2 tins tinned tomatoes whole
• 2 tbsp tomato puree
• 1 tbsp sugar
• 250ml stock (1stock cube
• 1 tbsp cumin
• 1 tbsp smoked paprika
• 1 tsp chilli powder
• 40g chocolate (or 2 tbsp cocoa powder)
• 15g coriander, roughly chopped (stalks included)
• salt & pepper to taste
TOPPINGS
• coriander
• lime
• avocado
• feta
• sliced red onion

Method:
1. Sautee onions and garlic in salt and pepper and oil on hob.
2. Add in grated carrots and red peppers, cook for 5 mins
3. Add all beans and liquid from cans then tinned tomatoes & puree.
4. Stock in next. Cook down on low and slow
5. Melt in chocolate and add spices (cumin, smoked paprika, chilli powder)
6. Leave to simmer and reduce for as long as poss, at least 30 minutes
7. Serve with rice/potatoes/guac
