Spicy, smoky and creamy, this quick and easy paprika sauce is perfect on any pasta, fresh or dry, long or short with extra or less sauce.
Try it, quick and delicious homemade sauce.
For the sauce :
2-3 roasted red peppers
Handful of cashews
20g fresh basil or parsley
1 tbsp olive oil
1 tbsp parmesan cheese
1 tbsp smoked paprika
1/2 tsp chilli 🌶
1tsp salt & pepper
2 portions of your favorite pasta ( boil in
salted water )
Top with butter and herb mushrooms :
4-6 mushrooms ( good size to stuff the centre )
2 tbsp butter mixed with 1 tbsp freshly chopped parsley , 1 clove garlic , minced , handful of cheese (I used buttercheese and mozzarella)and salt and pepper.
Mix the butter ingredients together then stuff inside the mushrooms, add cheese & bake at 200 ° C tan for around 20 minutes or until bubbling inside.
Get the pasta into boiling salted water and cook until Aldente.
Mix all of the sauce ingredients together in a blender , taste test , adding a little more seasoning if needed.
Drain off most of the pasta ( save a cup of pasta water to add while adding the sauce for creaminess).
Mix with the sauce over a low heat , season generously then add the roasted mushrooms on the top.
Cook, eat and be happy!
