This is my take on Hungarian Pork Paprika Goulash. I am no cook or chef in any way. I love cooking and experimenting. Goulash generally has potatoes in but I am not a fan.

There is no sugar in this recipe.
I do not measure out ingredients. I ‘Chuck It In’ don’t be afraid….
To make this….
Pork, cut into cubes, (enough for 4)
A Little Flour, any sort ( I use Wholemeal Spelt for health benefits)
Paprika ( best to use Sweet Paprika ) any will do, I added Cumin as I didn’t have Sweet)
Salt and Pepper….
Mix this all together, then gently fry until nice and brown.
Then add:
Chorizo ( Optional, I love the taste)
At the same time in another pan add,
Oil (any sort) I use Extra Virgin Oil
1 Onion, cut up
2 Garlic cloves or as many as you like
Mushrooms, (as many as you like)
Sweet Peppers (Red & Yellow)
once cooked add it too the Pork.
Then add:
Tomato Puree around 2 tablespoons
Oregano (chuck it in)
More Paprika (around 2 tablespoons)
Red Wine Vinegar (about 2 tablespoons)
400g Tin of Tomato’s
Chicken Stock (around 250ml)
Sour Cream, Once cooked, as you dish up, add and gently stir it in.
Add a little Parsley on top (Optional)
Eat with Bread or rice.
NOTE: only stir in the sour cream to the dish you are eating straight away, not to any that you may be saving to re-heat as it will curdle if you reheat it.
