Pulled Pork & Mac and Cheese

Pulled Pork
4 garlic cloves
2 tbsp demerara sugar
5-6 tsp smoked paprika
3 Sprigs of fresh thyme
4-5 lb bone in pork shoulder
2 onions
330 ml lager beer
1L beef stock
Salt & pepper to taste

Season the meat, roast for a couple minutes on each side. Char the onions. Add everything to the Pressure Cooker and cook on medium heat about one and half hour. Remove the meet and mix with BBQ sauce (BBQ sauce recipe in McRib video)

Mac and Cheese
16 oz elbow pasta
4 tbsp unsalted butter
1/3 cup all-purpose flour
2 1/2 cups milk or heavy cream
4 oz white American cheese
8 oz white Vermont cheddar
2 tsp Dijon mustard
1 tsp salt
1/4 tsp hot sauce

Cook pasta to al dente. Melt the butter and add flour, mix and wait until bubble. Pour milk. Cook for about 6-8 minutes on low heat. Add mustard, hot sauce and salt, mix and add cheese. Wait until melts and add pasta. Cook for 1 more minute.
