Hungarian Beef Goulash Recipe
3 lbs boneless beef round or chuck cut into large cubes
Flour for dredging
1 tsp butter
2 large onions, chopped
1 clove garlic pressed
2 tsp Hungarian paprika
1 red bell pepper, seeded and cut into large cubes
1 12 oz can whole tomatoes
2 bay leaves
1 cup beef stock
Salt and pepper to taste
1 cup sour cream
Dredge the beef cubes in the flour.
In a Dutch oven heat the butter and sauté’ the meat, searing on all sides.
Remove the meat to a platter, and add the onions and red bell pepper, sauté until the vegetables are soft. Add the paprika, stir well and return the meat to the Dutch oven.
Add the tomatoes, bay leaf and ½ the beef stock, mix well, bring to a boil and season with the salt and pepper. Cover the Dutch oven and reduce the heat to low. cook for 1 hour or until the meat is tender, add the remaining stock to keep the mixture moist. When the beef is cooked remove from heat and add the sour cream, stir well and place the goulash in a serving bowl. Serve with noodles.
