Hungarian Chicken Fusion Salad | Paprika Chicken Pineapple Spinach Mustard Kiwifruit

I always keep spinach, baby carrots, beetroot, cherry tomatoes, red onion, cucumber, sweet apples and pineapple in my fridge. They form the basis of any good salad to which you can add any plant based food, chicken, beef or pork. Choose a dressing and then mix away. Croutons or crispy noodles can also be added.

1 slice pineapple chopped
6 cherry tomatoes quartered
1 baby carrot finely grated
1 generous handful chopped spinach
1 kiwifruit peeled and chopped
1/3 red onion finely sliced
1 small chicken breast
1 heaped tsp ground paprika
1 tbsp extra virgin olive oil
Sea salt and ground black pepper
Dressing:
1 heaped tsp melted honey
1 heaped tsp Dijon mustard
2 tbsp red wine vinegar
