Recipe for Paprika veggies with Spinach rice is mentioned below:-

For paprika gravy:

Ingredients: (For sautéed veggies)
1. Oil 2 tbsp
2. Garlic 2 tbsp (chopped)
3. Sweet corn – 1/2bowl (boiled)
5. Carrot -1 bowl
6. Mushroom -1/2 bowl
7. Mixed bell peppers -1bowl
8. Broccoli -1bowl
9. Salt & pepper to taste
10. Paneer cubes (150gms)
11. green chilli – 1 tbsp
12. onion – ½ bowl
13. Tomato- ½ bowl

( For paprika sauce):
1. 2 tbsp cooking oil
2. All purpose flour (maida) 1 tbsp
3. Milk ( as required )
4. Paprika powder 1 tbsp
5. Salt to taste
6. Black – 1tspqa
7. Sugar- 1tbsp

Method:
●Heat a pan, add oil and garlic, Saute. Now, add sweet corn & carrot, broccoli, bell pepper saute and further add the remaining veggies, salt & pepper to taste, stir and cook for 2-3 minutes, now add the paneer and mix gently. Sautéed veggies are ready, keep it aside.

● For paprika gravy, heat a pan on low heat, add butter and flour, mix and cook for 3-4 minutes, now add milk in 3-4 batches, whisk well while adding milk to avoid lump formation. Cook the gravy until its thick and creamy. Now add paprika powder, salt to taste, black pepper powder a pinch and mix well and cook for 1-2 minutes, now add the sautéed veggies and cook for 1-2 minutes,
● Delicious Paprika gravy with sautéed veggies is ready, serve hot with hot spinach rice..enjoy!!!

For spinach rice Ingredients:

For blanching Spinach
1. Spinach 1 big bunch
2. A pinch of salt
3. Fresh coriander 1 bowl
4. Green chillies 3-4nos.
5. Ginger- 30gms
● Water.
● Butter 1 tbsp & oil 1 tsp
● Garlic 1 tbsp
● Cooked basmati rice (1 bowl)
● Salt to taste
● Black pepper powder a pinch
● Lemon juice 1 tbsp

Method:
● In a pan boil water, add cleaned and washed spinach leaves and blanch for 1 min. In a grinder add spinach, fresh coriander, ginger and green chillies and some water, grind to a fine puree and keep it aside.
●Heat a pan, add butter & oil, garlic. Sauté for 1-2 minutes on medium flame, now add the spinach puree and cook for 4-5 minutes. Now add the cooked rice, salt to taste, black pepper powder a pinch and lemon juice, stir and cook for 4-5 minutes, stir gently without breaking the rice grains.
Delicious spinach rice is ready…… Enjoy with sauté veggies in paprika gravy!!

Tip: You can also enjoy sauté veggies with noodles or fried rice.
