3 HEALTHY & BUDGET-FRIENDLY RECIPES // 2021 Aldi Australia Haul part 2



In this video I show you 2 delicious recipes using ingredients from my 2021 Aldi Australia vegan grocery haul! Make sure to watch that video first! In this video I make some delicious Mexican bowls, a super tasty spinach curry and scrambled tofu! Each of these meals are really simple to make, packed full of nutrition and taste incredible! Mexican bowl ingredients (4 large portions)
800g sweet potato
1 packed plant based mince
1 can black beans
1 can diced tomato
Guacamole: 1/2 avocado + lime, salt and pepper (PER SERVE)
olive oil
200g mushrooms
2 capsicum
1 large zucchini
+1 brown onion!
Spices:
– smoked paprika
– cumin
– chipotle seasoning
– garlic salt/garlic powder
– salt and pepper

ESTIMATED NUTRITIONAL PROFILE (per serve)
Energy: 615cal
Protein: 26g
Carbs: 80g
Fat: 21g

Spinach Curry INGREDIENTS (6 large portions):
2 BLOCKS OF FIRM tofu
800g of diced tomatoes (2 cans)
I packet of frozen spinach
200ml coconut milk
1/2 cup stock (I used Massel chicken style stock powder mixed with hot water)
1 brown onion
A drizzle of olive oil for cooking onion
3 heaped tsp of minced garlic (6 cloves fresh garlic)
1-2 tsp maple syrup
1 tbsp Tamari or soy sauce
4 tsp curry powder
2 tsp garam masala
1 tsp cumin
1/2 tsp allspice
1/4 tsp turmeric
1/2 tsp paprika
Salt and pepper to taste
+ RICE to serve (I cooked 2 cups of basmati rice in my rice cooker which makes 6 serves)

WITHOUT RICE
Energy: 330cal
Protein: 23g
Carbs: 13.6
Fat: 19.2

WITH RICE
Energy: 540cal
Protein: 28g
Carbs: 61g
Fat: 19g

TOFU SCRAMBLE (1 SERVE)
150g firm tofu
1/3 cup almond milk
Mushrooms, spinach and cherry tomatoes
1/2 an avocado
BB!=Q sauce
– curry powder
– tumeric
– paprika
– salt and pepper
– garlic powder

Energy: 440cal
Protein: 21g
Carbs: 27g
Fat: 28g
