There are many different Meat Loaf recipes in the world, but this recipe for Walter’s Killer Meat Loaf will have you and your guests begging for one more slice!

3 lbs high quality ground beef
1/2 Red Bell Pepper
1/2 Green Bell Pepper
1/2 Yellow Bell Pepper
1/2 White Onion
1 stick celery
1 clove Garlic, finely minced
1/2-1 cup Italian breadcrumbs (*homemade best)
1 Egg, whisked
1 tsp ground Fennel seeds
1 tsp Dried Oregano
1/4 cup brown sugar
1 splash Worcestershire Sauce, or Gluten Free Soy Sauce
3 cups Tomato Sauce
Salt and Pepper to taste

For the Topping Sauce:
the remaining Tomato Sauce
Fresh Ground Black Pepper
1 tsp Smoked Paprika
1-2 Tbs Maple Syrup

*Make your own breadcrumbs by pulsing two slices of bread with a tablespoon of dried Italian herbs, e.g. Basil, Thyme, Oregano.
