Resep Ikan Bakar Jimbaran by Street Food Recipe. Bali Spicy Grilled Fish (Homemade Recipe)

RECIPE:
Ingredients:

2 pompano fish or any fish you prefer (gutted)
1 lime.
Salt and pepper.
3 red peppers (cut onto chunks).
2 tbs of oils.
1 tsp of paprika powder.
Yellow Basic Seasoning:

10 garlics.
10 shallots.
3 thumbs of ginger.
10 candle nuts.
1 tbs coriander seeds.
3 lemongrass (white part only).
1 tsp cumin powder.
2 thumbs of kaemferia galanga.
4 tbs oil.
Water as needed.
1 tbs turmeric powder.
Basting Sauce:

8 tbs of Indonesian sweet soy sauce.
1 tbs melted butter.
Dipping Sauce:

Some Indonesian Sweet Soy sauce
Some Thai Chillies.
Some lime for drizzle (optional)
Steps:

Slash the surface of the fish.
Rub 1 lime juice all over the fish.
Sprinkle fish with a little bit of salt. Sprinkle some black pepper too. Keep on fridge for 15 minutes.
Blend until smooth red peppers and oils.
Heat pan on low-medium, stir fry red peppers for 20 min. Stir regularly.
After 20 min, add paprika powder and mix well.
Blend smooth all ingredients for Yellow Basic seasoning, stir fry on low medium for 20 min.
After 20 min, let the seasoning cool completely.
Take half of the yellow seasoning.
Mix with sauted red pepper.
Rub the seasoning all over the fish including cavity.
Let the seasoned fish rest for 30 min.
Prepare the grill.
Brush the grill with oil when it is hot enough.
Grill the fish for 7-10 min on each side or until the fish is cooked completely.
After cooked completely, brush fish with basting sauce.
Grill part with sauce for another 2 min and do the same for the other side.
Serve immediately.
Mix Indonesian sweet sauce and Thai chillies, serve the fish with this simple dipping sauce and with lime juice as preferred.

Bahan:

2 ikan pompano atau ikan kesukaan anda (buang bagian perut)
1 jeruk nipis.
Garam dan merica.
3 paprika merah (potong kotak-kotak).
2 sendok makan minyak.
1 sendok teh bubuk paprika.
Bumbu Dasar Kuning:

10 bawang putih.
20 bawang merah kecil, apabila besar cukup gunakan 10 biji.
3 jempol jahe.
10 kemiri.
1 tbs ketumbar.
3 serei/sereh (bagian putih saja).
1 tsp jintan bubuk.
2 jempol kencur.
4 tbs minyak.
Sedikit air.
1 tbs kunyit bubuk/kunyit segar 1 jempol.
Bumbu Oles Panggang:

8 tbs kecap manis.
1 tbs mentega leleh.
Bumbu Cocol:

Kecap manis secukupnya.
Cabe rawit secukupnya.
Jeruk nipis untuk tambahan (sesuai selera)
Langkah:

Sayat bagian permukaan ikan.
Lumuri ikan dengan air 1 buah jeruk nipis.
Taburi ikan dengan sedikit garam. Taburi dengan merica secukupnya. Simpan dalam lemari es selama 15 menit.
Haluskan paprika merah dan minyak.
Panaskan wajan dengan api kecil sedang, tumis paprika merah selama 20 menit sambil terus di aduk.
Setelah 20 menit, masukkan bubuk paprika dan aduk rata.
Haluskan semua bahan bumbu dasar kuning dan tumis dengan api kecil sedang selama 20 menit.
Setelah 20 menit, dinginkan bumbu dasar kuning hingga sempurna sebelum digunakan.
Ambil separuh bumbu dasar kuning.
Campur dengan tumisan paprika merah.
Lumuri seluruh bagian ikan termasuk rongga dalam perut dengan bumbu campuran diatas.
Biarkan ikan selama 30 menit.
Siapkan perapian untuk membakar ikan.
Apabila pemanggang sudah panas, lumuri dengan minyak.
Bakar ikan selama 7-10 menit pada masing-masing sisinya atau hingga matang.
Setelah matang, olesi ikan dengan bumbu kecap.
Panggang bagian yang sudah diolesi kecap selama 2 menit, lakukan langkah yang sama untuk sisi sebelahnya.
Campur kecap manis dengan cabe ratiw dan sajikan bersama Ikan Bakar sebagain bumbu cocol. Boleh suka ditambahan perasan jeruk nipis pada ikan. Selamat menikmati.
