I love the combination of sweet potato and black beans and it really help them stick together when you are making them. I can probably sneak a lot of healthy things in this one like flaxseeds or some dark leafy greens but it has enough nutrition and FIBER to make you feel amazing about what you are eating, satisfied with every bite and full when you are done. These are fun to make with the kids especially if they like to mash things and mix stuff with their hands as you can see in the video. You can play around with different types of grains. 2 large cooked sweet potatoes (roast them or microwave each for 4-5 minutes)
1 ½ cups cooked brown rice or quinoa
1 can of rinsed black beans
¼ cup finely chopped red onion
½ cup fine chopped walnuts (can do this with chef knife or food processor
1 tbsp smoked paprika
1 tbsp cumin
Pinch and salt and pepper
Pinch of cayenne pepper if you like some zip and spice
Top burgers with avocado and bbq sauce, lettuce and tomatoes or whatever you like
Microwave sweet potatoes whole for 4-5 minutes separately or preheat over to 400 degrees, cut potatoes in half, put them face down on parchment paper on a cooking tray and then in the oven at 400 degrees for about 30 minutes. Roasting gives them more flavor but if you need to save time nuke them. Mash beans in a large bowl, you want a little chunkiness for texture. Add the rest of the ingredients and mix well. Form into burgers with hands, Bake for about 35 minutes at 375 degrees and check on them halfway through.
