► Pumpkin Soup
30 oz homemade or canned pumpkin
3 cups beef stock
1/2 cup onions
3 garlic cloves
1 tsp pepper
1/2 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp ground coriander
1/2 tsp chipotle chili powder
1/4 cup condensed almond milk (optional)
Cilantro (garnish optional)
Add pumpkin, beef stock, onions, and garlic to to blend
Add blended mixture to a sauce pan and add dry ingredients (pepper, cumin, paprika, coriander, chili and powder)
Bring to a boil on medium heat
Simmer for 15 minutes on low heat
Serve and Enjoy with optional garnishes.
