Imagine Mexican rice with spices, paprika, and meat mince. Now imagine the melted Kraft cheddar cheese flowing on the top. This is an irresistible dish! #Kraft_it
1.5 cup basmati rice (rinsed and soaked for 10 minutes then drained)
2 chopped red bell peppers
1 chopped onion
2 cloves of garlic (minced)
1 can of black beans (drained and rinsed)
1 can of sweet corn (drained)
300g minced beef
1.5 – 2 cups Beef or chicken stock (depends on the type of rice)
1 Tsp. Of paprika or chili powder
1 Tsp cumin
1 Tsp coriander
Salt and pepper to taste
Coriander leaves and green onions for decoration
1 Kraft cheddar cheese tin, shredded
In a pot over high heat add 2 tbsp. Of vegetable oil sauté the onion and garlic.
Add the beef and brown
Add the bell pepper and cook for several minutes.
Add the beans and corn
Then add the rice and spices
Then the stock
Bring to a boil then cover and reduce the heat to low .
Let it cook till all the liquid is absorbed and the rice is fluffy .
Add some of the cheese and stir it into the rice.
Put the rice in a baking dish and top with the remaining cheese .
Put it in the oven just until the cheese is melted.
Serve hot and garnish with coriander leaves and green onion.
