Smoked Paprika Chicken & Veggies with Yogurt Sauce
Ingredients
4 SERVINGS
1/4 cup olive oil
4 garlic cloves, minced
1 tablespoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon Korean Chili Flakes
1/2 cup plain Greek yogurt
3 chicken breasts, sliced into large tenders
12 oz fresh Brussel sprouts
12 oz cherry tomatoes
1/2 cup chopped fresh cilantro
1 tbsp olive oil
Directions
-Preheat oven to 350°. Mix first 5 ingredients in medium bowl.
-Pour 1 teaspoon spiced oil mixture into small bowl; whisk in yogurt and set aside for sauce.
-Add tomatoes, and Brussel sprouts to remaining spice mixture and toss to coat. Set aside.
-Cook Chicken in a skillet with olive oil until the outside is crispy and browned- transfer to baking sheet.
-Season Chicken with salt, pepper, chili flakes, cumin, and paprika.
-Arrange veggies in sauce around the chicken. Any extra sauce can be poured over the chicken.
-Roast until chicken is cooked through, about 15-20 minutes.
-Take out of the oven and sprinkle with cilantro.
-Transfer to plates and serve with yogurt sauce.
