I got this Stuffed Peppers With Ground Beef And Rice Recipe from the Metabolic Cooking Cookbook. What I liked best about this Stuffed Pepper recipe was that the recipe was very simple and straight forward. While assembling the ingredients I was concerned that the peppers were going to be bland since there was no salt added, and the ingredient list was so short. This was far from the case. I can tell you that these Stuffed Bell Peppers were packed with flavor.
This was the first recipe that I have made using a recipe from the Metabolic Cooking Cookbook, but it won’t be the last. There are a few other recipes that I plan on make coming soon.

Stuffed Bell Peppers Ingredients:
* 4 Large Bell Peppers (I used 5 since 2 were smaller)
* 8 Ounces Ground Beef
* 1 Cup Brown Rice (cooked)
* 1 Onion diced
* 3 garlic cloves minced
* 1/2 Cup Parmesan Cheese grated
* 1/2 Tsp. Thyme
* 1/2 Tsp. Basil
* 8 Ounces Tomato sauce
To make this recipe all that you need to do is mix all of the ingredients together except for the tomato sauce and stuff the peppers with the mixture. One change I made was adding a little tomato sauce to the mixture. Once the bell peppers are stuffed, add water to dish (about 1/4 inch) then bake covered for 1 hour. Enjoy
