Japan hasn’t always been synonymous with street food, but it’s a growing trend that has slowly taken hold in Tokyo and Osaka, home to the famous Hashimaki & okonomiyaki.
Hashimaki is prepared on a griddle. The savory dish consists of flour, eggs, cabbage, as well as a variety of possible veggies and meats.It is most often prepared ‘Kansai Style,’ with the ingredients mixed together and then poured on the grill. the finished dish is then wraped on a stick and usually topped with some mayonnaise, and savory okonomiyaki sauce.
barbecue sauce 4tbsp
scallions 1/4 cup finely chopped
cabbage 1/4 cup finely chopped
carrots 1/4 cup finely chopped
oil to grease the pan
dashi powder 1tbsp
you can substitute dashi powder with 2 tbsp chicken powder
All-purpose flour 250g
Water 400ml approximately.
Recipe for homemade Okonomiyaki sauce:
Ketchup 3 tbsp
Worcestershire sauce 3 tbsp
Honey 1 tbsp
Soysauce 1 tbsp
just mix all these ingredients together and your homemade okonomiyaki sauce is ready .
RECIPE FOR HOMEMADE BARBECUE SAUCE
chili powder 1 tbsp
Hungarian paprika 1 tbsp
turmeric or dry mustard 1 tsp
ground cumin 1 tsp
ground cloves (optional) 1/4 teaspoon
brown sugar 1/4 cup
ketchup 1 cup
apple cider vinegar 1/4 cup
water 1/4 cup
molasses 1 tbsp
Worcestershire sauce 1 tbsp
garlic paste 1 tbsp
coarsely ground black pepper 2 tsp
Mix well all these ingredients in a pot and cook over low heat for 30 minutes, stirring occasionally and keeping care that it doesn’t burn. Allow to cool completely in the refrigerator, allowing flavors a few hours to meld. Store in the refrigerator up to 2 weeks
