½ large red pepper/capsicum
¼ cup red onion diced
½ cup defrosted mixed vegetables drained
1/3 of British or hot house cucumber cut into small cubes
1 jazz or pink lady or kiku apple rough chopped
1-3 Serrano peppers finely minced (optional)
1-2 tbsp cilantro or coriander minced
2 spring onions or scallion chopped
1/3-1/4 cup of cherry tomatoes halved
1 lime juiced
Zest of lime
Dressing
4 cloves garlic minced
½ cup extra virgin olive oil or oil of your choice
¼ cup apple cider vinegar
2 tbsp agave or honey or evaporated cane sugar
¼ tsp chili oil
Salt
Pepper
Secret ingredients
2 tsp cream sherry or Marsala wine (optional)
1 tsp of smoked paprika (optional)
