THIS TASTY HUNGARIAN PAPRIKA STEW IS OFTEN (by mistake) CALLED GOULASH IN SEVERAL COUNTRIES. Step by step cooking, easy to follow.
INGREDIENTS: 4 persons
2 ½ pounds of beef (lower plate)
2 sweet peppers
4 hot chili peppers
1 cucumber
Salt & pepper
Salad green
4 tomatoes
Fresh or sour cream (thick)
2 tbsp vegetable oil
BEEF STOCK:
Bones and fat from lower plate
1 carrot
3 garlic bulbs
1 onion
1 bunch of parsley
4 cloves
1 tbsp black pepper corns
4 bay leaves
¼ bunch of thyme
Course sea salt
Cooking time: 2 to 3 hours
STEW SPICES:
1 tbsp dried marjoram
1 tbsp dried parsley
4 to 5 tbsp sweet paprika
1 tbsp smoked paprika (medium hot)
6 to 7 oz tomato paste
Salt & pepper
Cooking time Stew: 2 ½ to 3 hours
GALUSKA:
1 pound wheat flour
2 eggs
Water
Salt
Cooking time: 20 to 30 min
SALAD DRESSING:
1 tsp sharp mustard
4 tbsp olive oil
1 ½ tbsp balsamic vinegar
½ tbsp honey
1 tsp dried marjoram
1 tbsp dried parsley
Salt & pepper
