You need this:
Red pepper
Red quinoa
Mushroom
Onion
Garlic
Cumin
Plant-based crème fraîche
Dijon mustard
Tarragon, chopped
Flaked salt
Plant-based grated cheese
You do this:
Boil the quinoa in salted water according to the instructions on the package. Chop the mushroom, onion and garlic into small pieces. Heat the oven to 200 C. Heat a frying pan to the highest temperature and fry the mushrooms in oil for about 3 minutes. Then add the onion, garlic and quinoa. Fry for about 2 minutes and season with salt and cumin. Cut the peppers in half and core them. Put the peppers in an ovenproof pan and fill them with the quinoa mixture. Feel free to top the peppers with any plant-based cheese in the desired amount. Bake in the oven or grill the peppers for about 20-25 minutes until they have softened and have a nice color. Mix plant-based creme fraiche with chopped tarragon and mustard and season with salt. Serve the peppers with the nice creme.
