Prime Rib smoked on the Green Mountain Grill, then seared on the Weber Grill in a cast iron pan. Topped with a homemade chimichurri sauce (details below).
Chimichurri: parsley, oregano, olive oil, salt, pepper, garlic, crushed red pepper.
Prime Rib: Coated in olive oil at room temp, rubbed in SPG, Lemon Pepper, and some Hungarian Paprika for color… Smoked at 225 until internal temp of 130 (Medium Rare) – rested for 30 minutes. Seared on a cast iron skillet until desired bark. Serve and Enjoy.
