🍲 Minestrone Soup 🍲
Ingredients:
2 tablespoons 🧈🧈
2 tablespoons oil
12oz. bag frozen Mire poix 🥕🥒🧅
2-6 cloves roasted garlic 🧄🧄🧄🧄-🧄🧄
1 russet potato, peeled and diced 🥔
1 yellow squash, diced
1 zucchini squash, diced 🥒
12oz bag frozen mixed veggies 🥕🧅🥔🍆🍠🥒
2 teaspoons salt 🧂🧂
1 teaspoon pepper
1 teaspoon smoked paprika
1 can white Northern beans
28oz can crushed tomatoes 🍅
1 can diced tomatoes with green chilies
64oz vegetable broth 🥕🧅🥔🥒🍆
1 cup small pasta
2-3 cups fresh spinach, chopped 🥬🥬-🥬
Instructions:
1. In a large soup/stock pot on medium-high heat, melt butter and oil. Add Mire poix, garlic, and one teaspoon salt and sauté for one minute. Add potato, yellow squash, zucchini squash, frozen veggies, remaining salt, pepper, and paprika. Stir to incorporate and sauté for 3-4 minutes.
2. To the pot, add beans, both cans of tomatoes, broth and pasta. Bring mixture to a boil. Add spinach and cook until pasta is done! Enjoy!
