This Falafel recipe is a big hit at the volunteer house thanks to Oscar. We have had fun perfecting and eating this recipe by baking burger patties or frying them into falafel balls. Falafel Patties – 8 burgers
INGREDIENTS
– 2 (15.5 oz.) cans chickpeas, drained and rinsed
or 1 lb. dried chickpeas, soaked, drained, and rinsed
– 1 white onion
– 1 red pepper
– 1/4 c chipotle peppers, canned
– 3 cloves garlic
– 4 green onions
– 1/4 cup parsley
– 1/4 cup oregano
– 1/4 c basil
– 2 tsp ground cumin
– 1 tsp coriander
– 1 tsp paprika
– 2 tsp salt
– 1 tsp pepper
– 1/4 c all-purpose flour
– juice of 2 limes

INSTRUCTIONS
1. Preheat oven to 375℉. Spread chickpeas on a baking sheet and bake for 15 minutes. Allow to cool for another 15 minutes.
2. In a food processor, blend chickpeas until flour-like then add to a large mixing bowl. Process the white onion, green onions, red pepper, garlic, adobo peppers, and seasonings together until it resembles a thick paste. Add the paste to the mixing bowl. Then add the lime juice and mix everything together evenly.
3. Stir in flour and form large patties. *Oscar’s technique in the video works wonderfully. 3:33
4. Place patties on a baking sheet and bake for 30-40 minutes, flipping halfway through for even coking.
5. Serve up with your favorite burger toppings.

Burger Buns – 8 servings
INGREDIENTS
– 1.5 c Luke warm water
– 4 3/4 c bread flour + little extra for kneading
– 1 tbspagave or maple syrup
– 2 tsp instant yeast
– 2 tsp salt
– 3 tbsp olive oil

VEGAN EGG WASH
– 3 tbsp unsweetened plant milk
– 1 tsp agave
– 1 tsp yellow mustard
– 1 tbsp sesame seeds
*Whisk ingredients together.

BUN INSTRUCTIONS
1. Mix the water and active yeast together then let sit to the side for 5 minutes.
2. Combine the dry ingredients (flour and salt) in a large mixing bowl.
3. Add the remaining wet ingredients (agave and olive oil) to the water and yeast. Pour the wet mixture into the dry slowly while stirring with a spatula.
4. Flour a clean surface and your hands and begin kneading the dough for 8 minutes. As the dough gets sticky add small amounts of flour at a time. Be sure not to add too much flour. Lightly grease the dough with olive oil once formed into a ball, and place in a bowl covered with a damp kitchen towel in a warm place.
5. Allow the dough to sit for one hour until it has doubled in size.
6. Fold over the dough on a floured surface then separate into 8 equal balls. Line up the balls about 4 inches apart on a baking sheet. Cover the balls with the damp towel and allow to rise again for 30 minutes. Preheat oven to 400℉.
7. After the balls have expanded apply the vegan wash to the top of the dough balls with a brush. Sprinkle sesame seeds on top.
8. Bake the buns for 15 minutes. Remove and allow to cool for 5 minutes, then transfer to a cooling rack.
9. Build your burger with whatever toppings you like or butter your buns and eat as is!
