1.SIMPLE ROASTED CHICKEN WINGS
Preheat oven to 150-200 degrees. In a large baking pan, toss 500g chicken wings with:
• 2tbsp of garlic
• 1tbsp of Italian herbs with paprika (according
to your taste)
• 2tbsp of fish sauce
• some olive oil and salt.
Stir mixture thoroughly, let it marinates for 5-10minute. Cook 20 minutes, then rotate sheet and flip wings. Cook until wings are browned and cooked through, 10 minutes. Serve with desired dipping sauce.
2. EGGPLANT& TOFU STIR FRIED
Tofu, also known as bean curd, is a food prepared by coagulating soy milk and then pressing the resulting curds into solid white blocks of varying softness; it can be silken, soft, firm, or extra firm. Beyond these broad categories, there are many varieties of tofu. And, eggplant can have a bitter taste, with an astringent quality, but it becomes tender when cooked and develops a rich, complex flavor. Eggplant can be steamed, stir-fried, pan fried, deep fried, barbecued, roasted, stewed, curried, or pickled. Tofu and eggplant is easy and flavourful plant based stirfry. Fry tofu and eggplant are cooked up with minced meats along with aromatics like garlic and ginger in this easy to make meal. I used some fish sauce in the cooking sauce to give it a nice savory flavor, and I’m guessing that’s an ingredient that some plant-based foods fans might not mind. But if you’re vegan or don’t want to use fish sauce, that’s fine! Do the way you want it!!
INGREDIENTS :
• 3- big onion, thinly sliced
• 2tbsp- minced garlic
• 4- Chinese eggplants, cut into 1 inch batons
• 150g- Silky or firm tofu
• 200g- minced meat (optional)
• 2tsp- Fish sauce
• Salt to taste
• Olive oil to fry
• Spring onions for garnish (optional)
INSTRUCTIONS
*Placed tofu pieces on the paper towel and let them dry at least 10 minutes. Press down with the palm of your hand to press water out of the tofu so it’s absorbed by the towels.
1. Heat some oil for about a minute, then add the eggplant slices and stir-fry until the eggplant is just starting to soften and brown but not be fully cooked. Put aside.
2. Add the tofu to the pan and stir fry for 3-5 minutes, or until the outside of the tofu begins to crisp a bit.
3. In the same pan, add sliced onions,sauté. Then add 2tbsp of minced garlic and cook just until they are fragrant, about 30-45 seconds. (Don’t let the garlic brown.)
4. Add the meat and stir fry quickly until browned. Don’t overcrowd the pan or you will steam the meat. We want this stir fried.
5. Then add the eggplant, 2tsp of fish sauce and 2tsp of salt. Mix well, season if necessary.
6. Add the tofu back to the pan, and sauté carefully. Cook about 5minutes, until all the tofu and eggplants are coated with sauce.
7. Garnish with spring onion (scallion) and serve hot.
